There are many places to save on your trip and even Disney has discounts at different times of the year. The solution is to find someone you know will work hard at finding the best deal for you. I have met many people at different travel agencies that will do a great job for you so check with others to see who they like to use and have had good luck with.
The Polynesian is one of the best places to celebrate a special event. Make sure to let them know ahead of time if you are going to be at the Polynesian during a special event. I am sure they will do their best to make it even more special.
